Black Bean Salsa

Black Bean Salsa

Ingredients:

Dressing:
6TBSP lime juice and zest of at least one lime
1/2 C EVOO
2tsp salt
1/4tsp cayenne
2TBSP sugar

2 cans black beans, rinsed
1 1/2 C sweet white corn
2 bell peppers, diced
2 cloves garlic, minced
1/2 C red onion, diced
1/2 C chopped fresh cilantro
1 large avocado, cubed

Mix dressing in a food processor and drizzle over fresh ingredients, folding in cilantro and avocado very last. Best served at room temperature and eaten day of.

Shopping list:
2 cans black beans
2 red, orange or yellow bell pappers (or combo)
3 limes
Sweet white corn (canned is fine, frozen is fine, fresh is best)
1 small red onion
1 bunch fresh cilantro
1 large avocado
Corn tortilla chips for dipping

Green Chile Enchiladas

Green Chile Enchiladas

Ingredients:

Oven: 350

Sauce:
1/4 C butter
1/4 C flour
1 can chicken broth
1/2 C sour cream
1/2 C green chile taco sauce
1 can diced green chiles --OR-- BEST: 1-2 diced hatch green chiles

1 pound or so of chicken, boiled and shredded
4 C cheddar or Mexican blend cheese
Package of 10 taco sized flour tortillas. I wish I loved corn tortillas in this, but I don't. So bring on the calories. Nobody's trying to eat healthy with enchiladas anyway.

To make the sauce, melt butter in a medium saucepan and add flour to make a roux. Allow to brown for a moment or two, stirring so it doesn't burn. Add chicken broth to basically make gravy, stirring well until fully combined. Add in green sauce, sour cream, and chiles. I always add a little extra sour cream and taco sauce, as I like my enchiladas good and saucy.

Grease a 9x13 pan and spread a little sauce all over the bottom of the pan. Begin rolling tortillas with chicken and cheese, and topping with about 2 TBSP sauce each. When the pan is full, cover those suckers in sauce. Top with plenty of cheese and bake for 30 minutes or until cheese just starts to brown.

4C bag of shredded cheese of your choice
Green taco sauce
Sour cream
1 can diced green chiles or 1-2 hatch chiles (you'll need to roast and dice them yourself if you buy fresh during August)
1 package of 10 taco sized flour tortillas (I like Guerrerro)

Chocolate Sauce

Chocolate Sauce

Ingredients:

1/2 C sugar
2 TBSP cocoa powder
1/8tsp salt
1 1/2 - 2 TBSP coconut oil or butter
1/4 C water

In a small saucepan combine dry ingredients and then whisk in water. Turn on to medium heat and add oil/butter. Whisk until the mixture begins to boil. Continue to whisk while it boils for one minute. Remove from heat and add 1/4tsp vanilla, stir well. Serve over ice cream or for whatever you intended this delicious goodness.

You'll never buy Hershey's again. Everrrrr.

Meatloaf

Meatloaf

Ingredients:

Oven: 350

1 1/2 lbs ground beef or turkey
2 eggs
1/2 C milk
1/2 C fine breadcrumbs or crushed saltines (I use Italian seasoned breadcrumbs)
1/4 of a small white onion, diced
2 TBSP parsley
1 tsp salt
1/8 tsp pepper
1/4c ketchup

Combine eggs and milk, stir in bread crumbs, onion, parlsey, salt, and pepper. Mix ground meat in evenly. Pat into a loaf pan and bake for 75 mins.

For a beef version, mix up 1/4C ketchup, and 2tsp brown sugar, 1 tsp mustard. Spread on top of loaf ten minutes before it's done baking.

Oatmeal Chocolate Chip Cake

Oatmeal Chocolate Chip Cake

Ingredients:

Oven: 350

1 3/4C boiling water
1 C uncooked quick oats
1 C lightly packed brown sugar
1 C sugar
1/2 C butter
2 large eggs

1 3/4C flour
1 tsp baking soda
1 tsp salt
1 heaping TBSP cocoa
1 12oz package semi-sweet chocolate chips

In a glass or stainless mixing bowl, pour boiling water over oatmeal, let stand 10mins. Add butter and stir well until completely combined. Add brown sugar and white sugar, mix, then add eggs and mix well.

Sift together flour, soda, salt, and cocoa and add to the oat mixture. Add half of the chocolate chips. Pour into greased and floured 9x13 glass pan and sprinkle remaining chocolate chips on top.

Bake for 40 mins.

Asian Chicken Slaw

Asian Chicken Slaw

Ingredients:

Dressing:
One 1/2" piece of ginger, grated
1 clove garlic, minced
1 TBSP sugar
1 TBSP soy sauce
Juice of one lime
1/2 C Canola oil

2 C cooked chicken breast
1 can mandarin oranges (in pure juice! No HFCS or added sugar!!)
4 green onion stalks, diced
1 small cucumber, seeded and diced
1 package of coleslaw or broccoli slaw (or a mix, also lovely)
1 large carrot, shredded (if not already in your mix)

For the dressing, grate your ginger and press the garlic into a food processor. Add lime juice, oil, sugar, soy sauce and mix well. Toss chicken and the remainder of the salad ingredients together in a large serving bowl. Serve dressing on side or toss in. Top with crispy wontons or broken up raw ramen noodles.

Small piece of ginger (if you get more than 1/2" you can make Teriyaki sauce from scratch with it!)

Curried Lentils

Ingredients:

1 TBSP EVOO
1tsp cumin
1/2 medium onion, diced
1/2 tsp turmeric
1/4tsp ginger
1/2tsp salt
1tsp curry powder

2 cloves garlic
1C red lentils
3 1/2 C low sodium chicken (or vegetable) broth
1/2 C frozen peas
1 C fresh spinach

1C rice, choose your favorite

In a large saute pan (that has a lid!), heat oil over medium. Add diced onion and all spices until onions soften. Add minced garlic and stir gently until it becomes fragrant. Stir in lentils and liquid of choice, bringing to a boil. Once boiling, reduce heat to medium low and simmer for 25 minutes. Now GO make some rice NOW while it simmers. Add peas and spinach to lentils during last few minutes to cook through and wilt. Serve over rice with naan or flat bread.

Ingredients:

1 lb hamburger or ground turkey, seasoned and browned, drained
1/2 C salsa (I like O'Hana salsa, local to Bend)
1/2tsp chili powder

8oz cream cheese
2C cottage cheese
2/3 C salsa

Shredded romaine
1C shredded cheddar cheese
1 medium can sliced olives
2 diced roma tomatoes or tomatoes on a vine
Diced red onion

Begin by browning and seasoning hamburger. Drain fat, add chili powder and salsa. In a mixing bowl, cream together cream cheese, cottage cheese, and salsa. Layer the bottom of a 9x13 pan beginning with the creamed cheese sauce, then the taco meat. Layer on lettuce, cheese, olives, tomatoes, and onion. Enjoy with corn chips!

Easy Quiche

Easy Quiche

Ingredients:

1C milk
4 eggs
1/2-3/4C shredded cheese
1 frozen pie crust (I find mine in the organic section at Freddy's, a 2 pack for about $5)
Mix ins: broccoli, red bell pepper, mushroom, onion, bacon, ham, turkey...whatever you love to eat.

Beat eggs, add a sprinkling of salt and pepper for each egg depending on how salty you want it, whisk in milk. If using veggies, saute them in butter with garlic and onion first. Arrange mix ins evenly in pie crust, pour egg mix over top. Bake at 350 for 50 mins or until it is fully set.

Scrambled Egg Bake

Ingredients:

10 eggs
2 C milk
1 1/2C shredded cheddar (medium or sharp is best)
1 tsp salt
6 slices sandwich or french bread, cubed (frankly, seeded breads really change the flavor/texture, I go for whole wheat)
1 lb breakfast sausage browned and diced

The night before baking, brown sausage, allow to cool, and dice it up. In a large mixing bowl beat eggs, add milk, salt, cheese, and fold in bread and sausage. Pour mix into greased 9x13 pan, cover, and refrigerate overnight. Preheat oven to 350 when morning comes and bake uncovered for 45 minutes.

This is very easy to split in half for a smaller crowd (4 or less).

Ingredients:

Preheat oven to 325

Dry:
1 1/2 C flour
3/4 C sugar
1/2 tsp salt
2 tsp baking powder

Wet:
In a 1 C measuring cup beat one egg, add 1/3c vegetable oil, top with milk.

1C frozen blueberries, or 2/3-3/4C of wild boreal blueberries (I get these from Trader Joe's in the frozen section)

Combine all dry ingredients into a mixing bowl, then add the wet ingredients and stir just to combine. Gently fold in blueberries. Grease up a muffin pan or line with muffin cups, fill 2/3 full. Bake for 23-25 minutes, turning the pan 180 degrees half way through.

Ingredients:

1/2C dried cranberries
1/4C sliced almonds
One chopped tart apple
Spring and romaine mix
Feta cheese for garnish
Poppyseed dressing

Toss all items together in a bowl. Ah. Easy.

Ingredients:

Zest and juice of one lemon
1/2 tsp cayenne
2-4 cloves garlic, minced
Salt and pepper
1/3 C EVOO

Mix ingredients and marinade chicken for 4-24 hours. Great for kebabs or grilled chicken breasts.

Ingredients:

3 TBSP New Mexico Chili Powder
1tsp each of coriander, cumin, salt, pepper
Pinch of cinnamon
2TBSP EVOO
Zest and juice of one lime


Mix into a paste and marinate up to 4 chicken breasts for 4-24hours.
