Apple Cinnamon Steel Cut Oats

Ingredients:

One tart apple
1 C Steel Cut Oats
3 1/2 C water
3 TBSP brown sugar
1 pat of butter
Some shakes of cinnamon
1/3 C slivered, chopped or sliced raw almonds
Raisins

Directions:

Bring water to a boil and slowly stir in steel cut oats, turn heat down to a very low simmer, enough that it's bubbling just a tad bit. If the simmer is too high the water will cook off too quickly. Time it for 30 minutes. Add in raisins. Once the oats and raisins are simmering, peel (optional), core, and chop a large tart apple into delicious bite-sized chunks. Saute those suckers in a pan with some butter, brown sugar, and cinnamon just until they've become a tiny bit tender. When the oats are through cooking, add the apple mix in and stir in almonds.

Grocery List:

One large tart apple
Steel cut oats (bulk is a great option if you don't make this often, but especially if you do!)
Raw almonds
Raisins

Easy Quiche

Easy Quiche

Ingredients:

1C milk
4 eggs
1/2-3/4C shredded cheese
1 frozen pie crust (I find mine in the organic section at Freddy's, a 2 pack for about $5)
Mix ins: broccoli, red bell pepper, mushroom, onion, bacon, ham, turkey...whatever you love to eat.

Beat eggs, add a sprinkling of salt and pepper for each egg depending on how salty you want it, whisk in milk. If using veggies, saute them in butter with garlic and onion first. Arrange mix ins evenly in pie crust, pour egg mix over top. Bake at 350 for 50 mins or until it is fully set.

Blueberry Muffins

Blueberry Muffins

Ingredients:

Preheat oven to 325

Dry:
1 1/2 C flour
3/4 C sugar
1/2 tsp salt
2 tsp baking powder

Wet:
In a 1 C measuring cup beat one egg, add 1/3c vegetable oil, top with milk.

1C frozen blueberries, or 2/3-3/4C of wild boreal blueberries (I get these from Trader Joe's in the frozen section)

Combine all dry ingredients into a mixing bowl, then add the wet ingredients and stir just to combine. Gently fold in blueberries. Grease up a muffin pan or line with muffin cups, fill 2/3 full. Bake for 23-25 minutes, turning the pan 180 degrees half way through.

Some Kind of Quiche

Some Kind of Quiche

Ingredients:
A pie dish, or something approximately that size will suffice
5-6 eggs, beaten
1/3 cup milk
A bunch of shredded cheddar
Broccoli
Diced red peppers
Fresh minced garlic
A couple of cups of mashed potatoes (reds are my personal favorite)
If you like meat, add some sausage (I like chicken sausage)
Salt
Pepper

Directions:
Preheat your oven to 350.

Cube potatoes and boil until they fall apart when poked with a fork. Mash them with a little butter, a little milk, and salt. Don't forget the salt! I did that once. I will never do it again. While potatoes are boiling, cook the sausage. Set all aside.

Take out your pie pan and grease it like a pig. Har. Line the pan with your freshly mashed taters 1/4-1/2" thick and set aside.

Grab your favorite mixing bowl, crack those eggs in and whisk 'em up. Add the salt, pepper, and minced garlic. Add the milk. Whisk 'em again. At this point I carefully spread out my veggies, cheese, and sausage evenly into the pan. I then pour the eggs over it, throw it in the oven, and bake it for 45 minutes or until it's done.
