Kebabs. Holy Kebabs.

Ingredients: 3 chicken breasts
2 Lemons
EVOO
Cayenne Pepper
Salt
Pepper
4-5 cloves of garlic
Veggies of your choice
Skewers

In the morning, or if you're really prepared, the night before, grab your chicken, cube it into good-sized chunks (a little larger than 1" cubes), place in a large ziplock. In a small bowl, squeeze the juice from your lemons and dump a bunch of EVOO in. Add a 1/2 tsp salt, some pepper, cayenne, the fresh garlic and mix it well. You choose how much cayenne, but boy does the flavor pop with a bunch in there. Marinate your chicken in this for at least 3 hours. All day is best.

When you're ready to grill, cube your veggies to about the same size as the chicken, or as close as you can get. I typically choose red bell pepper, pineapple, onion, and zucchini. Be sure you've soaked your wooden skewers for 30 minutes to an hour.  Put everything on the skewers in a lovely pattern or complete disarray -- your choice. Grill, serve, rejoice, repeat all summer long.
