Apple Cinnamon Steel Cut Oats

Ingredients:

One tart apple
1 C Steel Cut Oats
3 1/2 C water
3 TBSP brown sugar
1 pat of butter
Some shakes of cinnamon
1/3 C slivered, chopped or sliced raw almonds
Raisins

Directions:

Bring water to a boil and slowly stir in steel cut oats, turn heat down to a very low simmer, enough that it's bubbling just a tad bit. If the simmer is too high the water will cook off too quickly. Time it for 30 minutes. Add in raisins. Once the oats and raisins are simmering, peel (optional), core, and chop a large tart apple into delicious bite-sized chunks. Saute those suckers in a pan with some butter, brown sugar, and cinnamon just until they've become a tiny bit tender. When the oats are through cooking, add the apple mix in and stir in almonds.

Grocery List:

One large tart apple
Steel cut oats (bulk is a great option if you don't make this often, but especially if you do!)
Raw almonds
Raisins

Black Bean Salsa

Black Bean Salsa

Ingredients:

Dressing:
6TBSP lime juice and zest of at least one lime
1/2 C EVOO
2tsp salt
1/4tsp cayenne
2TBSP sugar

2 cans black beans, rinsed
1 1/2 C sweet white corn
2 bell peppers, diced
2 cloves garlic, minced
1/2 C red onion, diced
1/2 C chopped fresh cilantro
1 large avocado, cubed

Mix dressing in a food processor and drizzle over fresh ingredients, folding in cilantro and avocado very last. Best served at room temperature and eaten day of.

Shopping list:
2 cans black beans
2 red, orange or yellow bell pappers (or combo)
3 limes
Sweet white corn (canned is fine, frozen is fine, fresh is best)
1 small red onion
1 bunch fresh cilantro
1 large avocado
Corn tortilla chips for dipping

Green Chile Enchiladas

Green Chile Enchiladas

Ingredients:

Oven: 350

Sauce:
1/4 C butter
1/4 C flour
1 can chicken broth
1/2 C sour cream
1/2 C green chile taco sauce
1 can diced green chiles --OR-- BEST: 1-2 diced hatch green chiles

1 pound or so of chicken, boiled and shredded
4 C cheddar or Mexican blend cheese
Package of 10 taco sized flour tortillas. I wish I loved corn tortillas in this, but I don't. So bring on the calories. Nobody's trying to eat healthy with enchiladas anyway.

To make the sauce, melt butter in a medium saucepan and add flour to make a roux. Allow to brown for a moment or two, stirring so it doesn't burn. Add chicken broth to basically make gravy, stirring well until fully combined. Add in green sauce, sour cream, and chiles. I always add a little extra sour cream and taco sauce, as I like my enchiladas good and saucy.

Grease a 9x13 pan and spread a little sauce all over the bottom of the pan. Begin rolling tortillas with chicken and cheese, and topping with about 2 TBSP sauce each. When the pan is full, cover those suckers in sauce. Top with plenty of cheese and bake for 30 minutes or until cheese just starts to brown.

Shopping list:
1 can chicken broth
1 lb chicken
4C bag of shredded cheese of your choice
Green taco sauce
Sour cream
1 can diced green chiles or 1-2 hatch chiles (you'll need to roast and dice them yourself if you buy fresh during August)
1 package of 10 taco sized flour tortillas (I like Guerrerro)

Chocolate Sauce

Chocolate Sauce

Ingredients:

1/2 C sugar
2 TBSP cocoa powder
1/8tsp salt
1 1/2 - 2 TBSP coconut oil or butter
1/4 C water

In a small saucepan combine dry ingredients and then whisk in water. Turn on to medium heat and add oil/butter. Whisk until the mixture begins to boil. Continue to whisk while it boils for one minute. Remove from heat and add 1/4tsp vanilla, stir well. Serve over ice cream or for whatever you intended this delicious goodness.

You'll never buy Hershey's again. Everrrrr.

Meatloaf

Meatloaf

Ingredients:

Oven: 350

1 1/2 lbs ground beef or turkey
2 eggs
1/2 C milk
1/2 C fine breadcrumbs or crushed saltines (I use Italian seasoned breadcrumbs)
1/4 of a small white onion, diced
2 TBSP parsley
1 tsp salt
1/8 tsp pepper
1/4c ketchup

Combine eggs and milk, stir in bread crumbs, onion, parlsey, salt, and pepper. Mix ground meat in evenly. Pat into a loaf pan and bake for 75 mins.

For a beef version, mix up 1/4C ketchup, and 2tsp brown sugar, 1 tsp mustard. Spread on top of loaf ten minutes before it's done baking.
